Unfortunately we didn’t get to go out last night at midnight. The weather decided to rain on my parade… literally and then it froze. The new plan is to go out tonight and get food and drinks. I’m more excited for the food. The one thing that sucks about getting carded is that my drivers license photo is terrible. I almost don’t even look like the same person. My picture was taken before I lost a ton of weight and it’s very noticeable in my face. I get embarrassed when I have to show it.
There’s something about sprinkles that make everything better. I’m not the best pancake maker so I was a little upset when they were all misshaped. To fix that problem I used a circle cookie cutter to make a perfect stack. The colors weren’t the best either so I dumped on a bunch of sprinkles and TA DAH! Perfect pancakes 🙂
Waking up and eating a big plate of these was almost like eating cake for breakfast, which is exactly what I wanted 🙂 I think these pancakes were even better than cake for breakfast because I didn’t have to eat lots of sugary frosting.
I’m sorry this post has been short but it’s my birthday and I’m going go and enjoy it 🙂
- 1/2 box Party Chip Cake Mix (Betty Crocker)
- 1 egg
- 1 cup milk
- 1/8 cup vegetable oil
- 1 tsp. vanilla extract
- In a small bowl combine egg, milk, oil and vanilla. Once the egg is beaten in the mixture stir in the cake mix. Once the batter is nice and thick heat a pan on the stove on medium-low heat. Grease the pan so the pancakes don't stick. Pour 1/4 cup batter on the pan and let cook until bubbles form. Once bubbles form flip pancakes and let cook for about 30 seconds. Remove from pan and enjoy!
