Growing up my mom would always make her poppy seed cake for birthdays. Even if we were getting a normal cake from a bakery she would still make hers too. It was almost like a tradition I guess. Her poppy seed cake is to die for! I wanted to try and make my own version of my favorite cake growing up… in cookie form.

Cinnamon Poppy Seed Cake Cookies

For the cookie "dough"
  1. 1/4 cup butter, softened
  2. 8oz. cream cheese
  3. 1 egg
  4. 1 tsp. vanilla extract
  5. 1 tbs. cinnamon
  6. 3 tsp. poppy seeds
  7. 1 box Duncan Hines yellow cake mix
For the cookie dusting
  1. 1 tsp. poppy seeds
  2. 1/2 tbs. cinnamon
  3. 2 tbs. granulated sugar
Instructions
  1. Preheat oven to 350º F. In a large mixing bowl cream together butter, egg, cream cheese, vanilla extract, cinnamon, and poppy seeds. Once well combined mix in the cake mix (dough will be very thick and sticky). Drop by tablespoons onto ungreased cookie sheet placing dough balls 2 inches apart from each other. In a small bowl mix together the dusting ingredients (poppy seeds, cinnamon, and granulated sugar). Sprinkle dusting ingredients evenly oven raw cookie dough balls. Bake for approximately 12 minutes (cookies will appear undercooked while warm). Cool on baking rack and enjoy!
