Cookie Dough Blondies

I’m sure you’ve seen numerous recipes for cookie dough brownies. I thought it was strange that there were so many recipes for cookie dough brownies, but no recipes for cookie dough blondies. I went in the kitchen and changed that problem immediately. These cookie dough blondies are something everyone will be talking about weeks after trying them. Sometimes when I bake goodies I have my boyfriend take them to work with him to get them out of the house. He ended up taking these to work and everyone LOVED them.

Cookie Dough Blondies via Sweet as a Cookie

His one co-worker still talks about them and I made them over a month ago. I meant to share this recipe with you all yesterday but I had to get out and enjoy the 75 degree weather since we don’t see much of that this time of year. Yesterday we went out and bought planters, soil, and some more seeds. I already started growing tomatoes, basil, parsley, and strawberries but I want to see how much I’m able to grow. 

Cookie Dough Blondies via Sweet as a Cookie

The seeds I  bought were pretty much every kind of pepper, thyme, green onion, peas, carrots, parsnips,  and cucumbers. I’m sure I forgot some others but I’ll be sharing pictures with you as my garden grows. Well hopefully it grows. I’m most excited for the carrots. I got a variety that will grow purple, white, orange, and red carrots. Color makes everything better so I’m sure they’ll be amazing. This is my first time actually trying to get something to grow to maturity from a seed. Before I just started the seedlings and then never transplanted them when they got too big… so of course they died.

I’m really determined to grow my own fruits and vegetables this year so hopefully everything will work out in my favor. While waiting for my seedlings to sprout I might make another batch of these cookie dough blondies. I think it would make everyone a little happier with more of these around.

Cookie Dough Blondies
Yields 16
A delicious blondie topped with egg-free cookie dough and drizzled with milk chocolate.

  1. 1 box Duncan Hines white cake mix
  2. 1/2 cup butter, softened
  3. 1/4 cup brown sugar, packed
  4. 1 tsp. vanilla extract
  5. 1 large egg
Cookie Dough
  1. 1/2 cup butter, softened
  2. 1/2 cup brown sugar
  3. 1/4 cup granulated sugar
  4. 2 tbs. milk
  5. 1 tsp. vanilla extract
  6. 1 cup flour
  7. 1/2 cup mini semi-sweet chocolate chips
Chocolate Drizzle
  1. 1 cup semi-sweet chocolate chips
  2. 1 tbs. butter
  1. Preheat oven to 350°F.
  2. Grease a 9 x 13 inch pan with cooking spray or shortening.
  3. For the blondies, In the bowl of your stand mixer combine butter, brown sugar, vanilla and egg.
  4. Once combined mix in cake mix until combined.
  5. Smooth dough into prepared pan.
  6. Bake for 25-30 minutes or until cooked through.
  7. Allow blondies to cool.
  8. For the cookie dough, combine butter and sugars until fluffy.
  9. Slowly mix in milk and vanilla.
  10. Stir in flour until combined.
  11. Once combined add in chocolate chips.
  12. Spread cookie dough layer over cooled blondies.
  13. For the chocolate drizzle, melt together chocolate and butter.
  14. Once melted either cover the blondies or drizzle. (I think the drizzle looks better)
  15. Cut into bars and enjoy!
