It may be because I’m obsessed with anything crunchy but I’ll never know for sure. These aren’t your average egg rolls. I decided to take my eggless cookie dough recipe, shove some in a egg roll wrapper… and fry it! If you love eating raw cookie dough (who doesn’t?) This recipe is for you!

Since school is starting back up next week a silly memory from my first week at college came to mind. Lets flashback to three years ago. It was the second or third night of “freshman orientation” (in other words we went to college early to meet people)… but anyways we decided to go to the freshman bingo. I remember wearing my favorite shirt that I had just bought for college. It was just a simple stripped coral shirt but it was so comfortable. We were all having a good time when one of the girls from the group right next to us slammed her bingo dauber down on the table… It exploded everywhere covering everyone around her with bingo ink. Did I mention the ink was green? The green never washed out of my favorite coral shirt. Although I only got to wear it once, it’s a night I’ll always remember. My first thought, “Welcome to College!” Oh and by the way, the girl never apologized… there was ink all over my arms and face, but I guess it was no big deal to her.

That night I went back to my dorm and called my mom hoping there was a way to get the ink out of my shirt. Since I was only a freshman it would be one of the first times doing my own laundry. There was no hope… I wish I would of had one of these cookie dough egg rolls to drown my sorrows. I also would have liked to throw a steaming hot one at the girl with the exploding bingo daubers face. < Yes I just said that… no I’m not sorry.

Cookie Dough Egg Rolls
Yields 6
A crunchy fried egg roll filled with ooey gooey cookie dough.

Ingredients
  1. 1/4 cup brown sugar
  2. 1/4 cup butter, softened
  3. 2 tsp. vanilla extract
  4. 1/3 cup flour
  5. 1/4 cup mini chocolate chips
  6. 6 egg roll wrappers
Instructions
  1. In a small mixing bowl combine brown sugar, butter and vanilla.
  2. Once well combined stir in flour until well mixed.
  3. Add in the mini chocolate chips stirring until evenly incorporated.
  4. Place 1/6 of the cookie dough in the center of each egg roll wrapper.
  5. Wet your fingers with water and run them along all four sides of the egg roll wrapper.
  6. Roll each egg roll and place in freezer until firm.
  7. Fry egg rolls in 350º F oil until golden and crispy.
  8. Drain on a paper towel and enjoy!

  1. *If you are unsure how to roll an egg roll look it up on google. I'm so bad at explaining I'd probably ruin it.
