This warm weather today has me happy. Is spring finally right around the corner? I’m not getting my hopes up just yet. These Easy 4 Ingredient Ice Cream Sandwiches can make any day feel warm, well unless you’re standing outside in the freezing cold eating one. If you love the old fashioned ice cream sandwiches from your childhood you will be sure to love these. What I love most about this recipe is that it is super simple! Seriously only four ingredients and you’ll have these whipped up in no time at all.
The whole time I was making these my boyfriend was hovering over me asking me, “are they done yet?”… men! He did say they were well worth the wait though 😉 The hardest part was letting the cookies cool. They smelled like ooey gooey brownies. I bet they would be wonderful in a bowl with a little powdered sugar and a scoop of ice cream on top. Oh man, my mouth is watering now.
Brownies are my weakness so when these came out of the oven smelling like them I just had to try one. They were so good I actually ate two. So technically I only got 13 ice cream sandwiches out of my recipe… oops! Don’t judge me, I’m sure you’ll do the same. These sandwiches are perfect for a birthday party. If I were an eight year old I would scream with joy at the sight of one of these babies.
If you’re making these for a younger crowd I would make the cookies smaller. The sandwiches come out man sized. That’s what my boyfriend says anyways. If he were cooking in the kitchen he would eat a 160z. steak every night. I don’t know how they do it. He can eat all he wants and he’s still tiny. It must be nice to be a man. - 1 box devils food cake mix
- 1/3 cup butter, softened
- 2 eggs
- 1/2 gallon vanilla ice cream
- Preheat oven to 350°F.
- In the bowl of your stand mixer combine cake mix, butter, and eggs with the paddle attachment.
- Once combined plop tablespoons of dough onto a parchment paper lined baking sheet.
- Bake for 8-10 minutes.
- Allow cookies to cool.
- Place a generous amount of ice cream between two cookies and enjoy!
