I’ve had this idea for weeks, no months. I have a note app on my phone where I keep a list of recipe ideas for my blog and this idea has been on the list for awhile now. Since it’s getting so close to Thanksgiving I decided to finally take the plunge and whip up these easy leftover stuffing egg rolls. I was in Walmart the other night (I only ever go at night, it’s way too busy during the day) and I happened to walk past the stuffing. It was a sign that I was supposed to finally share this incredible idea. 

Let’s be honest stuffing is already pretty amazing on its own but by pairing the stuffing with the crispy egg rolls, it makes it a match made in heaven.

Thanksgiving is great. You get to eat endless amounts of food and spend time with family you only see once a year. The worst part of the holidays is traveling. Personally I would rather stay home and be the host but we live the furthest away so we do the traveling.  I’m sure that will change once we’re married with a bus load of children <– sometimes I joke, but maybe I’m serious πŸ˜‰

Leftover Stuffing Egg Rolls
Yields 8
Crispy fried egg rolls filled with delicate savory herb stuffing

Ingredients
  1. 1 cup Leftover Stove Top Savory Herb Stuffing, chilled
  2. 8 egg roll wrappers
  3. 1/4 cup vegetable oil
Instructions
  1. Place 2 heaping teaspoons of chilled stuffing in the center of each egg roll wrapper.
  2. Wet your fingers with water and run them along all four sides of the egg roll wrapper.
  3. Roll up each egg roll.
  4. Fry egg rolls in 350ΒΊ F oil until golden and crispy.
  5. Drain on a paper towel and enjoy!

    I like stuffing almost as much as I like pie on Thanksgiving, and that’s a whole lot. I’m loving the idea of frying stuffing in an egg roll wrapper!
