Lemon Supreme Rice Krispies Treats

I’ve been on a lemon kick lately. I’m pretty sure it’s because warm weather is finally coming. One of my favorite things to drink is lemonade. When thinking about lemonade I think of refreshing and that’s exactly what these rice krispies treats are. No matter the temperature outside, when you bite into one of these bad boys it will feel like it’s the middle of summer.

Ingredients
  1. 4 and 1/2 tbs. butter
  2. the zest of 1 lemon
  3. the lemon juice of 1 lemon
  4. 1 and 1/2 bags of marshmallows (10oz. bags)
  5. 2/3 cup Duncan Hines Lemon Supreme cake mix
  6. (I believe Duncan Hines has the most flavor)
  7. 6 cups Rice Krispies Cereal
Instructions
  1. Prepare a 8×8 inch or 13×9 inch pan with shortening; set aside.
  2. In a large saucepan melt butter over low heat with the lemon zest and juice.
  3. Add in marshmallows and stir until completely melted.
  4. Slowly stir in the dry cake mix.
  5. Once combined remove from heat and stir in the cereal.
  6. Using greased spatula press mixture into greased pan.
  7. Cool on the countertop for approximately 30 minutes.
  8. Enjoy!

      Hi Amy,
      Any brand will work. I just find Duncan Hines lemon to have the most flavor.
      If you can’t find any lemon cake mix try using a white cake mix with the zest of 3 lemons
      and also the juice from those 3 lemons. Hope this helps!

    My daughter made these for me to take to a party. They were a HIT! Everybody loved them. I was sad that I hardly had any left to take home, heeheehee. Definitely will be making these again. Thank you for the recipe!

      It won’t have as much flavor but you can make them without the cake mix and use the zest of 4 lemons and the juice from 4 lemons. I hope you like them :)

    Oh, thanks for gluten free option! I was wondering how I could do that. Good thing I just bought a zester! My kids are home sick so I’m happy to induct them into the beautiful world of rice crispy treats!

    Just made these for my sisters birthday, she loves all things lemon , instead of her usual lemon bars I make her I made her these, of course I had to have a sample. Can I say OMG!!! DELISH

      I’m going to try making these for the upcoming Memorial holiday weekend. They sound delicious. Recipe indicates 4 1/2 tbs (tablespoons) of butter; not pounds. :)

    I wanted something other than cake for my birthday. One of my favorite things while pregnant is Rice Krispie treats.Since I’m preggo on my bday- this fit the bill!! OMG, nom nom nom.. Thanks for the yummy twist on a classic treat!!

    I am going to try making these for my sister’s birthday this weekend – she loves lemon! Just another tip: if you can’t find Lemon Cake Mix, just add 1 pkg of dry lemon pudding mix to a vanilla/white cake mix.

    Miss Karissa,
    I made these this morning. OMG (I don’t speak thusly, but I will now). I made a batch, waited a short time then cut two squares, one for me and one for DH. He picked his up set it down and said I will have to wait until this sets up. I with a mouthful (another thing I do not normally do) said it won’t change the taste any. He picked it up again and started to eat it. I walked away, went about my business, but they kept calling me. So as I am passing through area DH is in, he holds up his plate and say I wouldn’t be adverse to tasting another one of these. Oh said I, I thought you were waiting for them to set up. So right now of a 9×12, have eaten 1/2 the pan minus two squares. OMG these are to die for. Thank you for putting these out there.
