I first had an oatmeal cookie about 5 years ago when I first started dating my boyfriend. He claims the oatmeal cookies never happened… but they did. Ever since then I have been obsessed. Adding whole grain oats to a recipe takes the cookie to a whole new level of goodness.

I made this recipe for a Christmas party last year and everyone was begging for the recipe. I added in some chocolate chips to make them even more over the top but they are just as amazing without them. I’m sure I’ll be making a double batch of these again this year.

Cinnamon Nutmeg Oatmeal Cookies

Ingredients
  1. 1 cup butter, softened
  2. 3/4 cup brown sugar, packed
  3. 1/2 cup granulated sugar
  4. 1 large egg
  5. 2 teaspoons vanilla extract
  6. 1 teaspoon baking soda
  7. 1 teaspoon salt
  8. 1 teaspoon ground cinnamon
  9. 1/2 teaspoon ground nutmeg
  10. 2 cups all purpose flour
  11. 1 1/2 cups quick oats
Instructions
  1. Preheat oven to 350º F.
  2. In a large bowl cream together butter and sugars until light and fluffy (3 minutes).
  3. Beat in the egg and vanilla until thoroughly combined.
  4. Stir in baking soda, salt, cinnamon, and nutmeg. Mix until incorporated.
  5. Mix in the flour and quick oats until just combined.
  6. Drop heaping tablespoons of dough onto a lined baking sheet.
  7. Bake for 10-12 minutes or until golden. Allow to cool on the pan.
  8. Store in an airtight container and enjoy!
