Soft & Chewy Snickerdoodles

If it feels like autumn and it smells like autumn, it must be autumn… right? … I wish! This weather is really giving me mixed signals so I needed to remind myself of the flavors of autumn by making a nice soft batch of snickerdoodles. Not only do these cookies taste amazing but they make your whole house smell amazing as they’re baking. I’m all for fall scents. The smell of pumpkin, cinnamon, apple and spice just put me in such a good mood. They make me feel comfortable and relaxed no matter how stressed I am.

Cinnamon though… my love for cinnamon is crazy. I seriously buy anything that has the smell of cinnamon or has cinnamon listed as an ingredient. It could be mac and cheese with cinnamon and I would buy it… okay probably not but you get my point. What I really want is a nice cinnamon facial scrub. Then all my cinnamon fantasies would be satisfied.

Soft & Chewy Snickerdoodles

Dough
  1. 3/4 cup granulated sugar
  2. 1/2 cup butter, softened
  3. 1 egg
  4. 1 tsp. vanilla extract
  5. 1 tsp. cream of tartar
  6. 1/2 tsp. baking soda
  7. 1/4 tsp. salt
  8. 1/2 tsp. cinnamon
  9. 1 and 1/3 cup flour
Rolling
  1. 2 tbs. granulated sugar
  2. 1 tsp. cinnamon
Instructions
  1. Preheat oven to 375° F. In a large mixing bowl cream butter, sugar, egg, and vanilla. Next mix in cream of tartar, baking soda, salt, and cinnamon. Once evenly mixed stir in flour until the dough is nice and sticky. In a small bowl combine sugar and cinnamon. Drop tablespoon sized balls of dough into the cinnamon sugar mixture and roll around until evenly coated. Place on an ungreased cookie sheet 2 inches apart. Bake for approximately 9 minutes. Cool on a baking rack and enjoy!

    I can never get my snickerdoodle cookies that flat! These look fab!
