Yogurt Banana Bread

 Well I finally did it. My hair is the shortest it has been since I was in first or second grade. It was starting to get too long and now it feels so much healthier. Spring break really feels like winter break this year. It is the first day of spring and it is currently snowing… where are you grilling weather?

Ingredients
  1. 2 ripened bananas, mashed
  2. 4 tbs. vegetable oil
  3. 1 cup vanilla yogurt
  4. 2 eggs
  5. 1 tbs. vanilla extract
  6. 1/2 cup granulated sugar
  7. 1/4 tsp. salt
  8. 1/2 tsp. baking powder
  9. 1/4 tsp. baking soda
  10. 1 and 1/2 cups flour
Instructions
  1. Preheat oven to 350º F.
  2. Spray an 8 inch loaf pan with PAM or other like products; set aside.
  3. In a large bowl mix together bananas, oil, yogurt, eggs, and vanilla until well combined.
  4. In a separate bowl mix together sugar, salt, baking powder, baking soda, and flour.
  5. Once mixed add dry ingredients to the wet ingredients, stirring until incorporated.
  6. Spread batter into prepared pan.
  7. Bake for approximately 45 minutes or until center of bread is cooked.
  8. Cool on a cooling rack and enjoy!

    How long should I bake if I use a muffin tin? I don’t have a loaf pan.

      I would bake for about 20 minutes and check with a toothpick. If still underdone put it back in the oven in 5 minute increments.

    I baked this the other night with chocolate chips. It was delicious but it took much longer than 45 mins. It might’ve been closer to an hour and twenty minutes. I’m not sure exactly.

    I made yogurt banana bread! I used greek yogurt and topped it with brown sugar; it came out great. It took over an hour to bake; it’s pretank ty dense and delicious. =) Thank you
